Samosas is a well known Indian snack which you will find across India. You will get them easily in almost every nook and corner in Mumbai. It is triangular shaped deep fried patties and can be seved with tea, chutney or tomato sauce. I made them today with evening tea and below is the recipe for the same.

Ingredients:
Outer Cover
1 1/2 cup all purpose flour(Maida)
2 tbsp oil
Water just enough to knead the dough
Stuffing
3 boiled potatoes and mashed
3/4 cup boiled green peas
2 green chillies
1tbsp corriander powder
1 1/2 tsp garam masala
1/4 tsp red chilli powder
1 tbsp oil
salt to taste
2 tbsp chopped corriander leaves
Servings: 10 samosas
Method:
Outer Cover
1) In a mixing bowl add the all purpose flour and to it slowly add the water in little quantities.
2) Add oil and knead the dough so that it becomes soft and piliable.
3) Cover it with a cloth and leave it aside for 20 mins.

Filling
1) Grind the green chillies with the corriander leaves in a grinder.
2) Heat the oil on medium flame on the skillet and add boiled mashed potatoes to it.
3) Add the green chillies and the corriander paste along with chilli powder, garam masala and corriander powder.
4) Mix well and add the boiled green peas to it. Saute it for about 2 mins and then remove from the flame.

1) Roll the dough just like chapati into a 5 inch circle
2) Cut it into 2 halves and apply little water to along the diameter
3) Make a cone from one of the halves and put in a tablespoon of the filling and seal the open side by appying little water.
4) Heat oil on medium flame and deep fry the samosas in it.
5) Serve with chutney or tomato sauce.
